Cottage Pie

Ingredients:

  • 1 tbsp oil

  • 1 onion, chopped

  • 2 carrots, diced

  • 500g beef or lentil mince

  • 2 tbsp tomato purée

  • 200ml beef or vegetable stock

  • 1 tbsp Worcestershire sauce (or soy sauce for veggie version)

  • 800g potatoes, peeled & chopped

  • 50g butter

  • 50ml milk

  • Salt & pepper

Method:

  1. Heat oil in a pan, add onion and carrots, cook 5 mins.

  2. Add mince and cook until browned.

  3. Stir in tomato purée, stock, and sauce. Simmer 15 mins.

  4. Meanwhile, boil potatoes until soft, then mash with butter, milk, salt & pepper.

  5. Spoon mince into an oven dish, top with mash, and fork the surface.

  6. Bake at 200°C (180°C fan) for 25–30 mins until golden.
