Cottage Pie

Ingredients:
1 tbsp oil
1 onion, chopped
2 carrots, diced
500g beef or lentil mince
2 tbsp tomato purée
200ml beef or vegetable stock
1 tbsp Worcestershire sauce (or soy sauce for veggie version)
800g potatoes, peeled & chopped
50g butter
50ml milk
Salt & pepper
Method:
Heat oil in a pan, add onion and carrots, cook 5 mins.
Add mince and cook until browned.
Stir in tomato purée, stock, and sauce. Simmer 15 mins.
Meanwhile, boil potatoes until soft, then mash with butter, milk, salt & pepper.
Spoon mince into an oven dish, top with mash, and fork the surface.
Bake at 200°C (180°C fan) for 25–30 mins until golden.
