Mushroom & Kale Creamy Pasta

Ingredients:

  • 200g pasta of choice

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 250g mushrooms, sliced

  • 2 handfuls kale, chopped

  • 150ml single cream or oat cream

  • Salt & pepper to taste

  • Parmesan or nutritional yeast to serve

Method:

  1. Cook pasta according to packet instructions.

  2. Meanwhile, heat oil in a pan and fry onion 5 mins.

  3. Add garlic and mushrooms; cook until soft.

  4. Stir in kale and cream; simmer 2–3 mins.

  5. Drain pasta, mix with sauce, and season well.

  6. Serve topped with cheese or nutritional yeast.
