Mushroom & Kale Creamy Pasta

Ingredients:
200g pasta of choice
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, minced
250g mushrooms, sliced
2 handfuls kale, chopped
150ml single cream or oat cream
Salt & pepper to taste
Parmesan or nutritional yeast to serve
Method:
Cook pasta according to packet instructions.
Meanwhile, heat oil in a pan and fry onion 5 mins.
Add garlic and mushrooms; cook until soft.
Stir in kale and cream; simmer 2–3 mins.
Drain pasta, mix with sauce, and season well.
Serve topped with cheese or nutritional yeast.
