Roasted Root Veg Tray Bake

Ingredients:
2 carrots, chopped
2 parsnips, chopped
1 beetroot, peeled & chopped
1 red onion, quartered
2 tbsp olive oil
1 tsp mixed herbs or thyme
Salt & pepper
Optional additions: chickpeas, halloumi, feta, or drizzle of balsamic
Method:
Preheat oven to 200°C (180°C fan).
Toss all veg with oil, herbs, salt, and pepper.
Spread on a baking tray and roast 35–40 mins, turning halfway.
Add any extras for the last 10 mins if using.
Serve as a main or side dish.
