Roasted Root Veg Tray Bake

Ingredients:

  • 2 carrots, chopped

  • 2 parsnips, chopped

  • 1 beetroot, peeled & chopped

  • 1 red onion, quartered

  • 2 tbsp olive oil

  • 1 tsp mixed herbs or thyme

  • Salt & pepper

Optional additions: chickpeas, halloumi, feta, or drizzle of balsamic

Method:

  1. Preheat oven to 200°C (180°C fan).

  2. Toss all veg with oil, herbs, salt, and pepper.

  3. Spread on a baking tray and roast 35–40 mins, turning halfway.

  4. Add any extras for the last 10 mins if using.

  5. Serve as a main or side dish.
