Spiced Apple & Cranberry Overnight Oats

Ingredients (for 2 servings):

  • 100g rolled oats

  • 250ml milk or plant milk

  • 1 small apple, grated

  • 1 tbsp dried cranberries

  • 1 tbsp chia seeds

  • ½ tsp cinnamon

  • ½ tsp vanilla extract

  • Optional: maple syrup or honey to taste

  • Topping: chopped pecans, extra apple or cranberries

Method:

  1. Mix oats, milk, grated apple, cranberries, chia seeds, cinnamon, and vanilla in a bowl or jar.

  2. Stir well, cover, and refrigerate overnight (or at least 4 hrs).

  3. In the morning, stir again and add toppings.

  4. Serve cold or gently warmed.
