Winter Veg Soup

Ingredients:
1 tbsp olive oil
1 onion, chopped
2 carrots, chopped
1 parsnip, chopped
1 potato, diced
½ small swede or turnip, diced
1 litre vegetable stock
1 tsp mixed herbs
Salt & pepper
Method:
Heat oil in a large pan, add onion and cook 5 mins.
Add all other vegetables and stir for a few minutes.
Pour in stock and herbs; simmer 25–30 mins until vegetables are soft.
Blend smooth or leave chunky.
Season to taste and serve warm with crusty bread.
