Winter Veg Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 1 parsnip, chopped

  • 1 potato, diced

  • ½ small swede or turnip, diced

  • 1 litre vegetable stock

  • 1 tsp mixed herbs

  • Salt & pepper

Method:

  1. Heat oil in a large pan, add onion and cook 5 mins.

  2. Add all other vegetables and stir for a few minutes.

  3. Pour in stock and herbs; simmer 25–30 mins until vegetables are soft.

  4. Blend smooth or leave chunky.

  5. Season to taste and serve warm with crusty bread.
